Hello I'm little confused about the description .. Usually what happens is if you're using ESP8266 , you make a local webserver , and connect to it through the router and mobile phone and then configure the necessary variables for the ESP8266 to connect to a server (Azure in this case) If you go this route , it's easy to add any other variables you want , also through the local webserver . Now , If you use ESP32 , usually this is done through BLE , because most people like to use BLE instead of changing their wifi on the phone . My guess is you used a ready made sketch on the ESP8266 that connects to azure and hence you find it difficult to adapt the needed changes .
