Book transfer into mp3 files

There is a book on youtube that I would like to cut in different mp3 files. At the moment the link is 7 hours, but I want to have little files of 2-5 minutes, depending on the chapter or Paragraph. I also would like to have an overview with table of content and the links must be named by chapter and paragraphs. - You can use a youtube downloader to get the whole link. And use an audio software to get the files... I have the book in pdf format to have as extra tool.
