wordpress woocommerce database optimization

I have a fairly large wordpress/woocommerce site (many thousands of products), but the database has never been optimized and is showing some errors in the logs with some of the plugins = some of which will need updating. But main task is database optimization first..
You can't just open phpmyadmin to do this, you will need to backup the db.
download the db.
optimize offline.
then upload, and apply new database.
This is the first task milestone. The db is currently 4.5gb in size.
The second task is to update wordpress, woocommerce and ALL the current plugins that are activated. This is the second task, to update all outdated plugins, but ALL existing site functionality must still work on the site. ESPECIALLY the plugins to push items to ebay, this CANNOT break.
The third milestone is to remove these plugins which are not activated without breaking anything, but by removing them completely -

but you must make sure that the image/colour selection changing on product pages works correctly still, example working here -

you can click the thumbnails to view different colours, but you can also choose size, then colour from the dropdowns and the picture changes as well.
The last task is to check the phperror logs and fix any issues that may be occuring that are slowing down the site from logging in, uploading new products or just browsing the site.

There are also errors when you go into woocommerce and click to duplicate a product, this is the last milestone to stop errors when copying or duplicating products in woocommerce that is causing the site to hang -

to recap, milestones are -
1. optimize database
2. update wordpress, woocommerce and all current plugings - no loss in functionality.
3. remove inactive/unused plugings
4. check php error logs for errors and resolve them to speed up admin login, woocommerce product duplication and copy functions which are causing the site to crash.
